Three South West Chef of the Year winners were demonstrating their winning dishes for visitors to the Source Taste of the West Food and Drink Show on 6th February 2019.
This two-day event showcases the region’s food and drink producers as well as an extensive range of non-food suppliers to the hospitality and retail sectors.
Sophie Kennard
South West Student/Apprentice Chef of the Year
Apprentice Chef at The Swan, Bampton and Exeter College
Sophie kicked off the demonstrations with a recreation of her winning main course dish: Cornish hake, celeriac and apple with a Somerset cider sauce.
Sophie was assisted by Jonathan Tooke and Max from Exeter College.
Mae Dionio
South West Young Professional Chef of the Year
Chef de Partie, Lucknam Park, Bath
Mae was up next and made her apple frangipane with vanilla chantilly. Mae is pictured here with Jonathan Tooke, chef lecturer at Exeter College.
Tim Kendall
South West Overall and Professional Chef of the Year
Sous Chef, The Idle Rocks, St Mawes
Tim prepared the two dishes that he cooked in the semi-finals: Duck with blackberry, celeriac and endive and Hake, Jerusalem artichoke, jasmine and sorrel (though in the semi-final this dish included John Dory, rather than Hake). Tim was assisted by Jess, a student at Exeter College.
Thank you very much to Jonathan Tooke, chef lecturer at Exeter College, who compered Sophie’s and Mae’s demonstrations and to Max and Jess, students at the college, who assisted our chefs on stage.
